Meal prepping has been a major help to my dieting. Every Sunday after work I hit the gym then return home to start my meal prepping for the weeks food supply. I’m really busy and constantly on the go so I found that meal prepping was good for me. I will say that it is a lot of work if you’re like me and enjoy variety in your meals. After I got the hang of prepping my meals I began making what I like to call ” pot luck” meals. Basically, meals made in one pot. Kinda reminds me of something a large family would eat for dinner. A lot of food with minimal effort. I’ve narrowed down one of my favorite pot luck meals I came up with that uses leftover grilled chicken which I always have an abundance of. P.s. I will not be giving detailed instructions or measurements, I’m Rae not Rachel ray lol.
#1 Balsamic Chicken
Precooked chopped boneless grilled Chicken breast ( 4 small cutlets)
jasmin or brown rice (2 cups)
Balsamic Vinegar (1/2 cup)
soy sauce ( maybe like a tablespoon)
lemon juice (3 tablespoons)
Cook your rice.
Heat your choice of oil in a skillet on medium to high heat. Add spinach . Add garlic, salt, pepper, and onion powder and garlic powder and reduce heat.
After spinach is cooked, Add precooked chicken to one side of pan. Add Balsamic, lemon juice and soy sauce to chicken.
Mix spinach and chicken together. Add cooked rice and blend together.
